Blueberry Cheesecake
Delicious blueberry cheesecake
Ingredients: 1-1/4 graham cracker crumbs cup softened butter 2 eggs sucanat or sugar 8 oz softened cream cheese 1 tsp vanilla tsp cinnamon cup sucanat or sugar 2 T arrowroot or cornstarch 2 cans blueberries drained (save liquid) 2 T lemon juice whipped cream (op)
Directions: Preheat oven 300 degrees. Mix graham cracker crumbs, and butter. Press evenly and firmly in bottom of ungreased baking pan.
Beat eggs then add sucanat or sugar, cream cheese and vanilla until smooth. Pour over crumb mixture. Bake 30 mins. Sprinkle cinnamon on top. Cool.
In saucepan mix cup sucanat or sugar, arrowroot or cornstarch. Stir in blueberry liquid and lemon juice. Cook stirring continuously until boils and thickens aprox 1 min. Remove from heat add blueberries and cool. Pour over cream cheese mixture. Chill over night. Add whipped cream (op)
