Blueberry Cobbler
A delicious bluebbery cobbler dessert
Ingredients: 2/3 cup sugar or (sucanat opt) 2 T cornstarch or (arrowroot opt) 3/4 cup water 3 cups blueberries fresh or frozen 1 tsp melted butter 1 tsp ground cinnamon 1 cup flour or (whole wheat pastry flour opt) 1-1/2 tsp baking powder 1/2 tsp salt 1/3 cup milk or (Blue Diamond Almond Breeze) 3 T melted butter
Directions: In pan combine sugar or sucanat, cornstarch or arrowroot. Stir in water. Bring to a boil stirring constantly. Boil aprox 1 min. Add blueberries. Pour blueberry mixture into a lightly buttered 1-1/2 quart baking dish or 9 inch pie pan. Sprinkle with cinnamon and lightly spread 1 tsp melted butter.
Sift flour, baking powder and salt. Pour milk and 3 T melted butter into a measuring cup. Add milk and butter to flour mixture all at once. Stir until mixture is moistened and forms a ball. Drop spoonfuls onto the blueberries. Bake 425 degrees for 30 minutes or until done.
