Blueberry Crumb Pie
A tasty blueberry crumb pie
Ingredients: 1/2 cup butter 2 cups flour or (whole wheat pastry flour opt) 1-1/2 tsp baking powder 1/2 tsp salt 3/4 cup sugar or (sucanat opt) 1 egg 1 tsp vanilla 1/2 cup milk or (Blue Diamond Almond Breeze opt) 5 cups washed blueberries 1 tsp ground cinnamon 1/2 tsp ground nutmeg 1/4 tsp salt or( Redmond Real Salt sea salt opt) 1/4 cup packed brown sugar 1 cup flour or (whole wheat pastry flour opt) 6 T butter softened
Directions: Preheat oven to 350 degrees Butter and lightly flour a 10 inch spring form pan.
In a bowl sift: flour, baking powder, and salt.
In another large bowl cream: butter and sugar or sucanat until soft aprox 3 4 mins. Turn mixer to low and add egg and vanilla. Alternately add the flour mixture and milk. Gently fold in the berries. Pour the batter into buttered pan and sprinkle topping on cake.
Bake 60 mins or until batter is done. Remove from oven and let cool for 45 mins. After cooling slide a knife around edges to loosen and remove side.
Mix dry ingredients together. Cut the butter using a fork and hands until crumbled finely. With hands form large clumps from crumb mixture.
