Blueberry Jelly
Tasty, homemade blueberry jelly
Ingredients: 2 quarts fresh blueberries 4 cups water 1/2 cup sugar or (sucanat opt) 2 pouches (3 oz each) liquid fruit pectin
Directions: Slightly crush blueberries in large pot. Add water and bring to a boil. Lower heat to medium and cook uncovered 45 mins. Strain through a jelly bag reserving 6 cups juice. Pour juice into a pot and slowly stir in sucanat or sugar until dissolved. Bring to a boil over high heat stirring continuously. Add pectin and bring to a rolling hard boil. Boil for 1 minute stirring constantly. Remove from heat and skim off foam. Pour into jars leaving inch space on top. Adjust caps and process 5 mins in boiling water.
