Blueberry Muffins
Great tasting blueberry muffins
Ingredients: 1/4 c butter 2 large eggs 2 cups flour or (whole wheat pastry flour opt) 2 - 1/2 tsp baking powder 2 T sugar or (sucanat opt) 1 orange, juice and rind juice to equal 1/2 cup 1/2 c milk or (Blue Diamond Almond Breeze opt) 1/2 c orange juice 1 c blueberries
Directions: Preheat oven to 375 degrees In blowl: Grate the orange peel and set aside.
In separate bowl: Squeeze orange juice and let sit.
In a bowl: cream butter, add eggs and mix well.
In another bowl: Sift flour, baking powder and sucanat or sugar together. Stir in orange peel. Alternately add the flour mixture, orange juice, and almond milk to the butter. Continue to stir well after each addition. Gently fold in the blueberries. Add paper liners to muffin tins and fill each cup 1/2 full with batter. Bake about 20 minutes or until done.
