Blueberry Pound Cake

Ingredients:
1 cup softened butter
2 cups sugar or (sucanat opt)
4 eggs
1 tsp vanilla
3 cups flour or (whole wheat pastry flour opt) divided
1/2 tsp salt
1 tsp baking powder
1 pint fresh blueberries or 2 cups thawed frozen blueberries

Directions:
Preheat oven 325 degrees.

In bowl:
Cream butter and sucanat or sugar.

While beating add eggs one at a time and beat until fluffy. Add vanilla.
In another bowl:
Sift 2 cups flour, salt and baking powder together. Add sifted ingredients to creamed mixture and beat.
Take remaining flour and lightly cover berries with it. Gently fold floured berries into the batter. Butter and lightly flour a tube pan. Pour batter into pan and bake for 1 hour and 15 mins or until done.
