Blueberry Scones
Heavenly blueberry scones
Ingredients: 1/2 cup heavy cream 1 egg 1 tsp vanilla 2 cups flour or (whole wheat pastry flour opt) 1/4 cup sugar or (sucanat opt) 1/2 tsp salt 1 T double acting baking powder 1/2 tsp baking soda 6 T butter unsalted, cut into pieces 3/4 cup blueberries
Directions: In a bowl: Whisk 1/2 cup of the cream, egg, and vanilla. and let sit.
In another bowl: Sift together flour, 1/4 cup sucanat or sugar, salt, baking powder, and baking soda. Add butter and blend until mixture is coarse like meal. Stir in blueberries and add cream mixture with a fork until mixture forms a sticky dough. Knead dough gently on floured surface 30 seconds. Pat into a 3/4 inch thick round and cut out rounds. Place rounds on buttered baking sheet, brush with additional cream. Bake in preheated oven 400 degrees aprox 18 mins or until done.
