Creamy Blueberry Pie
Creamy dreamy blueberry pie
Ingredients: 1/4 c sugar or (sucanat opt) 3 T cornstarch or arrowroot 1/8 tsp salt 1 lime grated peel 1 T fresh lime juice 2 pints fresh blueberries rinsed and drained well 1 pint heavy cream 1 tsp vanilla 3 T sugar or (sucanat opt) 1 baked 9 inch pie crust, cooked (homemade or store bought)
Directions: In saucepan combine 1/4 c sucanat or sugar, cornstarch or arrowroot, salt, lime juice and peel and 1-1/2 cup blueberries. Cook the mixture over medium heat continuously stirring until the blueberries are soft and mixture is thick aprox 4 minutes. Remove from heat and stir in the remaining blueberries. Let mixture cool.
Whip vanilla and remaining 3 T sucanat or sugar until stiff. Spread 3/4 cream in bottom of pie. Top with the blueberry mixture and top pie with whipped cream. Chill aprox hour.
