Heavenly Blueberry Cheesecak
A true heavenly, light, blueberry cheesecake
Ingredients: 2 lbs softened cream cheese 1/2 cup whipping cream 6 eggs 1-1/2 cups sugar or (sucanat opt) 3 T flour or (whole wheat pastry flour opt) 3 T cornstarch 1-1/2 T vanilla 2 T lemon juice 1 cup sour cream 1/2 cup melted butter 1-3/4 cup fresh blueberries
Directions: In bowl: Beat cream cheese, cream, eggs, sucanat or sugar, flour, cornstarch, vanilla and juice until light and fluffy. Add sour cream, butter and blueberries and gently mix. Pour into a 10 inch buttered springform pan. Line pan first with crumb crust if desired. Bake in preheated 350 degree oven 1 hour. Let cool in oven with door open 1 hour. Refrigerate overnight.
