No Bake Blueberry Pie

Ingredients:
1 9 inch baked pie crust
4 cups blueberries
34 c sugar or (sucanat opt)
2-1/2 T arrowroot or cornstarch
2 T cold water and 2 T lemon juice
1/2 tsp ground cinnamon

Directions:
Fill baked pie crust with 3 cups blueberries. In a saucepan crush remaining 1 cup berries and stir in sucanat or sugar, cook over med heat stirring until well mixed and sugar or sucanat dissolved.

Mix together arrowroot or cornstarch, water and lemon juice. Add to the above berry mixture along with cinnamon. Cook, stirring until mixture boils and thickens. Pour over berries in pie crust. Refrigerate 2 hours or up to 8 hours. Serve with ice cream or cool whip (opt)
