Nutty Blueberry Muffins
A nutty blueberry tasting muffin
Ingredients: 1/4 cup butter softened 2/3 cup sugar or (sucanat opt) 1 tsp grated lemon peel 1 egg 1/2 tsp vanilla 1-1/4 cup blueberries 1 cup plus 2 T sifted flour or (whole wheat pastry flour opt) 1 tsp baking powder 1/4 tsp salt 1/3 cup milk or (Blue Diamond Almond Breeze opt) 1/4 cup chopped pecans (optional)
Topping
1 tsp sugar or (sucanat opt) and 1/8 tsp ground cinnamon or ground nutmeg
Directions: Preheat oven 375 degrees.
In mixing bowl cream Butter, sucanat or sugar lemon rind about 4 to 5 minutes. Beat in egg and vanilla.
In blender blend 1/4 c blueberries and beat into the butter mixture. In another bowl put flour, baking powder, and salt. Fold the dry ingredients into the batter little at a time alternating with the milk. Fold in the remaining 1 cup blueberries and the pecans.
Fill muffin tins with muffin cup liners. Fill the muffin cup liners with the mixture and sprinkle muffins with the spice/sucanat or sugar mixture.
Bake about 25 minutes or until done.
