Yummy Blueberry Muffins
Easy and yummy blueberry muffins
Ingredients: 1 egg c almond milk (Blue Diamond Almond Breeze) or milk c oil (olive) 1-1/2 c whole wheat pastry flour sucanat or milk 2 tsp salt chopped nuts (walnuts, pecans) 1 c blueberries fresh or frozen
Directions: Preheat oven to 400 degrees.
Beat egg, stir in oil and milk. Mix in the remaining ingredients till flour is moist. The batter will be lumpy. Fill muffin tins with muffin cup liners and fill cups 2/3 full. Bake for 20 25 minutes or until done.
